In 1910, master blender Timothy Thornhill, was looking to name his newest bottled creation. Fatefully, the day his rum launched overlapped a rare astrological event: a total eclipse over the South Pole. The legendary rum would be named Eclipse, reflecting its uniqueness and exceptional quality.
Eclipse is the reference for character, body and aroma by which Mount Gay’s Master Blender Allen Smith uses to blend every variety of Mount Gay Rum. For many rum aficionados, Eclipse is also the reference by which all rum should be measured. Eclipse has a brilliant golden amber color and a luxuriously complex aroma.
TOTAL ECLIPSE OF THE HEART
1 oz Mount Gay Eclipse
1 oz Dark Herbal Liqueur
1 oz Pineapple Juice
¾ oz Lime Juice
¾ oz Cane Syrup
Splash of Sparkling Red Wine
Method: Shake all ingredients (except sparkling red wine), strain over large cube in a double rocks glass and top with sparkling red wine.
2 oz Mount Gay Eclipse
½ oz Fresh Squeezed Lime
½ oz B12 mixed with Simple Syrup
Top with Ginger Beer
Method: Add all ingredients to a Collins glass (or a vessel of your choice!) with ice and stir. Top with ginger beer. Watch it glow. Drink it slow.
2 oz Mount Gay Eclipse
4 oz Ginger Beer
1 tsp Activated Charcoal
1 Grapefruit (carved out)
Method: Mix Mount Gay Eclipse and activated charcoal in a glass with ice. Strain into carved out grapefruit and top with ginger beer.

2 oz Mount Gay Eclipse
4 oz Ginger Beer
Method: Add ice to a rock glass. Garnish with orange-wheel.
